A Fluffy Gluten-Free Pancake

In this cute, centrally located café in Oxford I had a late breakfast. The sun was breaking through and shining nicely on the table where I was sitting. It had been cold in Oxford! I ordered the gluten-free pancake since I was craving some sweetness and nothing too heavy on the stomach. My eating partner in crime had an English breakfast that they could also prepare gluten-free. The pancake is folded, so it is bigger than it looks down here in the photo, and it was tasty. Fluffy, light and delicious, as well as the fresh fruits. The fruits were organic and very tasty, not the occasional fruits that sometimes end up on your plate while they are not yet ripe, sour and still too tough to eat. A perfect breakfast and everyone that worked here was very kind and helpful!

Safety: this cafe doesn’t have a dedicated gluten-free kitchen but they take cross contamination into account.
